- Calvados Domaine Dupont VSOP, fine, quality Calvados. This VSOP is a bright golden colour, with an intense yet soft nose of oak, vanilla and apple, and a supple mouth which also offers subtle almond. Made from a combination of apples which give optimum acidity. The poor clay and oxfordian marl soils produce very small apples, which increases the aromatic intensity and pulp-to-skin ratio. The double distillation happens 6 months after the fermentation, and the resulting spirit is then aged for 5 years in oak barrels, 25% of which are new. Delicious over ice, for flambéeing, or as a digestif.
The Dupont Family have been working towards the highest quality Calvados for 25 years now, with Etienne at its helm until his death in 2018.
Production is now overseen by his son Jerome. Viewing their production like wine, they realised that with hand harvesting, and by adopting other oenological techniques, they could achieve an elegance and refinement in their produce that they had not previously acheived. Only the best apples are picked to go into the blend, which can be up to 13 different varieties. The fermented apples rest for 6 months on the lees before double distillation and maturation in oak casks. Famille Dupont now produce some top vintage ciders and calvados from their 30ha estate.
