Calvados Pays d'Auge Adrien Camut 6 ans d'age, 6 year old Calvados spirit. This high quality Calvados is made from cider made up of 25 different apple varieties, which are then barreled for around a year, before being distilled into spirit. The spirit is then casked again for several years befor bottling without filtration. The aromas are fresh and appley with subtle hints of oak and flavours of caramelised apple and spice. Delicious.
The Camut family has been producing calvados on their Pays d’Auge estate for almost 200 years and were at the forefront of the development of this fine aged spirit suitable for the resurgent restaurant scene that followed the end of World War II in France. Today you will still see their name on the lists at some of the world's best restaurants. The estate is planted with about 4,000 traditional hi-stemmed apple tree varieties (approximately 25 different types) which give balance to the cider and subsequent distilled spirit. No pesticides are ever used and the cider is aged in oak barrels until the following September when distillation commences. After its long ageing, the Calvados is bottled without filtration so as to preserve its character.
