Frinire di Cicale Malvasia di Candia Aromatica Passito Podere Pradarolo 500ml, biodynamic wine, no added sulphur (very rare for a dessert wine) rich, lush and complex yet with incredible freshness. This incredible 'Passito' dessert wine is made from organic Malvasia grapes grown in the hillside vineyards around the historic town of Palma in Emilia-Romagna. Passito comes from the word 'appassito' meaning withered and describes the process of sun drying the grapes allowing them to shrivel like raisins to intensify the sugars but maintaining the acidity. The shrivelled grapes then undergo a wild fermentation in barrels which stops on its own with no intervention when the wine reaches about 13%-14% abv. The wine is then aged in barrels without sulphur and bottled without sulphur. This is a unique bottle of wine dessert wine, very rare to find stickies with no added sulphur and no filtration as most tend to re-ferment in the bottle. For some reason and I am not sure Alberto knows why, this one doesn't! The texture is superb, rich and comforting but with delicious orangy acidity which keeps the wine very fresh in the mouth. Notes of toffee, caramel, walnuts, dried apricot, honey and ginger leap from the glass and follow through on the palate. A sticky for strong blue cheeses drizzled with honey or rich sweet tarts, home made ice cream and such like. A hedonistic glass of wine.

The Pradaralo Farm is located in Serravalle, the town of Varano dè Melegari, in the lower valley of Ceno, in the Parma province. Purchased by the Carretti family in 1971, staring from 1989 the farm is gradually converted to the production of wines, reviving an old way of life on the farm. Alberto and Claudia now oversee the wine making. They work with organic viticulture and long maceration of both red and white wines, native yeasts in order to obtain a wine which is healthy, long-lasting, natural, with an ancient flavour, original, and reflective of its terroir. The climate is tempered by a cooling sea breeze.
