Don Jose Oloroso Romate, dry sherry, nutty, moreish. A very special Oloroso from top producer Romate. This is solera aged for around 18 years, and it has an incredible palate of spice, walnut and coffee beans.
Juan Sánchez de la Torre originally founded Sanchez Romate in 1781 in Jerez, and to this day, Sánchez Romate is one of the oldest bodegas in Spain and one of the few that remains in family hands. This means they are still able to produce traditional wines independently, using grapes from their own vineyards (in the best albariza soil areas of Jerez). Recently they have invested in some of the most modern facilities in the region, all of which are still housed in the bodega buildings located in central Jerez. These traditional cellars with their high ceilings keep temperatures stable and allow the natural yeasts to circulate while the sand floors keep the humidity at the correct levels. The ageing process is through traditional criaderas y soleras with 500 litre American oak casks. These are some of the best sherries we've tasted.
