IGP Coteaux Varois Louis Baptiste Rose Chateau Fontainebleau, Biodynamic Rose Wine, Cinsault, Grenache, old vines, wild yeast, rich, well balanced. The name of the 16 hectare estate comes from the proximity to the river and the abundance of water in the subsoil meaning the vines suffer from less water stress in the height of summer and this helps the ripeness of the fruit and the delicacy if aroma. The Louis Baptiste is the top Cuvee of Rose from the oldest vines in the estate. The fermentation is all natural in steel and the intensity of the wine comes solely from the vineyard where yields are lower and the fruit as ripe as can be. It is a soft and heady feel to the palate, full but in no way lacking finesse. A delicious and serious Rose for grilled Tuna or Monk Fish.
Owned by Jean-Louis Bouchard, with winemaking overseen by Valerie Courreges, Chateau Fontainebleau was a forgotten plot of vineyard gold until 2009. Since then, using biodynamic principles, the vines have been revived and winemaking has begun again. The 27ha of vines benefit from a natural amphitheatre and a unique terroir of red pelite, to create wines of finesse and quality that are typically Provencale. Due to the vineyard's configuration, the grapes can only be picked up by hand. This enables the domain to harvest parcels separately, letting others continue to ripen, and thus improving the production quality.
