Mitolo Jester Cabernet Sauvignon is a wine of great depth and lush intensity. 20% of the grapes are dried on mats for about 6 weeks like an Amarone and this adds an extra layer of concentration to the already ripe Cabernet berries. The wine is cool fermented partially in barrel and then aged in older barrels for 9 months. Deep garnet red. Lifted, fresh and undeniably varietal characters of violets and blackcurrant with underlying herbal notes of green capsicum and mint. Fresh, bright, youthful and full of vitality, the wine is bursting with red berry and cassis flavours. This is very serious Australian Cabernet at this price. Undeniably a full fruity wine (one might say fruit bomb!), it is nevertheless a very good one and cold nights with hearty food alongside it would make for a very enjoyable time. The 14.5% alcohol will also give you a nice warm glow!

The Mitolo family arrived in Australia in the 1950s from Abruzzo in Italy with a background in winemaking. After years working as market farmers, Frank Mitolo also started making wine for friends and family. In 1999, they met with winemaker Ben Glaetzer and dreamed up Mitolo wines, which aimed to capture the richness of the McClaren Vale. Their ethos is to produce wines of individuality, integrity, quality, purity, elegance and power. The first Mitolo wine was produced in 2000, and since then Mitolo have added another 10 wines to the range. The winery works closely with its growers, the Loprestis. The Loprestis, who also emigrated from Italy, produce fruit of the highest quality from heavy clay soils which are kept fresh by the sea breeze. In the winery, Ben takes a ‘hands-off’ approach, fermenting cool to retain purity, and using a range of barrel coopers to generate complexity yet respect and enhance the fruit.
