Krimiso Cataratto Aldo Viola (Orange Wine) 100% Cataratto, Natural wine of immense character, orange wine which doesn't blow your head off, approachable and fine. Although the maceration time with the skins for Krimiso runs into the months, the extraction is gentle, Aldo uses patience and time rather than mixing and pumping over to let the soft, delicate flavours of the Cataratto grapes and skin contact develop slowly. The wine is very fine in youth, taut and citrussy, with notes of wild herbs, minerals and very fine tannins. Delicious wine, the new wave of Sicilian wines are truly delicious.

The organic domain of Aldo Viola comprises of 16 hectares split between two sites near the city of Alcamo on the northwestern coast of Sicily. Today it is presided over by Aldo, son of Don Ancilino Viola. A rigorous selection process assures that only the highest quality grapes are used for the label of Aldo Viola. Aldo Viola wine is the product of true passion and know-how passed down over four generations. Aldo, son of Don Ancilino, was raised in the rhythm of wine making. Their goal has always been to fuse science with tradition to safeguard their land which is ideally suited to grape growing. Excellence, Nature, and Tradition are the three axis of development pursued by the Viola Family. The small scale of their production(a mere 10000 bottles per year across 4 labels) allows Aldo the luxury of taking charge of the entire process; from the planting of the vines to the labelling of the bottles.

The natural approach, both in the winery & vineyard, results in the restoration of soil fertility. Organic cultivation alongside concepts of Biodynamics enhance the wines and give a strong territorial identity. With a philosophy of working in harmony with the forces of nature, Aldo Viola is creating fine naturals wines of elegant character which will only get better with time.
