Langhe Bianco di Serralunga Fernando Principiano, Natural Wine, rare 100% Timorasso, fermented & aged in stainless steel. This recently revived grape embodies the ageing potential of a Burgundian Chardonnay, the fresh acidity of a Loire Sauvignon and the subtle salt and umami from a Jura white. Portraying subtle almond and a creamy lime zest this is perfect with fresh crab, pasta or that Friday night Mediterranean pizza.
Ferdinando Principiano is based on the southern fringe of the Barolo zone, and benefits from the biodiversity of the Alta Langhe wilderness that lies beyond the dense planting of Nebbiolo vineyards. This helps in maintaining balance in the vineyard. In 2003 he moved away from conventional production and since then he’s been rewarded by the purity and drinkability of his wines. He uses wild yeast fermentation and organic methods, as well as minimising the sulphur used.

White grapefruit & sea air nose. Thin on opening, more pithy citrus and unripe stone fruit. Muscadine. Touch of salt. With air gets a bit honeyed, bringing a nice balance to the zippy top notes, and a bit of something floral. Medium acidity. First time with this varietal, and no idea what to look for. Lovely simple food wine.
