Meursault Limonzin Fanny Sabre, 100% Organic Chardonnay, Natural Wine, Burgundian classic, smooth, rich and elegant white wine. I tasted the 2012 Meursault from Fanny when it had just been bottled. It was very clean, very tight, very precise. Not a bit of the over the top butterscotch character or creaminess so often the dominating flavours of this wine. Fanny's wines are very subtle and behind the closed door of green fruits and citrus in youth, there is a wine that with time will develop into something very special. But it will take a few years and seeing as there are only around 1000 bottles a year to go at, i doubt many will see their second birthday. So, if you like to age white Burgundy, this wine is a superb option and if you also just love top class Chardonnay, open it now and it won't disappoint.
The Fanny Sabre domaine is located in Pommard and is just 4.5 hectares in size. Fanny makes over a dozen different cuvee so quantities of any of the wines are very low. She took over from her father who started the domaine in the 80s and learned from the help of natural wine guru Philippe Pacalet (famous for his work at Domaine Prieuré Roch) who guided her for the first few years. She works totally naturally using organic farming, wild yeast, concrete and wood for fermentation and virtually never chaptalises unless it is absolutely necessary. Her red wines are seamless, classic, dry but with a core of sweet fruit and a texture like pure velvet. The whites are very very fresh and the oak is so well integrated, you simply don't know it's there. The Meursault produced in minute quantity which vanishes extremely quickly is as crisp as a Sancerre in youth but has the potential for majesty if it ever makes to maturity, a wine to cellar and savour after 10 years.
