Delicious Wines from the hills of Stellenbosch

This Sunday we are delighted to be welcoming our friend Louis Boutinot from Waterkloof in Stellenbosch, South Africa.  This incredible wine estate was started by Louis' Dad Paul in 2003 after a 10 year search for a site which could enable him to produce fine, elegant wines in the Cape.
Paul started his wine career as a Sommelier at his parents’ restaurant La Bonne Auberge in Manchester in the 70s and set up his eponymous importing and winemaking business a few years later.  After many years importing the wines he discovered and loved from all round the world, he sold Boutinot in 2013 to focus fully on his own wine making project at Waterkloof in South Africa.
The site he found is very special, a 200 hectare farm (100 under vine) up on the Schapenberg hillside, (Afikaans for ‘Sheep Mountain’).  It nestles in the embrace of the Hottentots-Holland and Helderberg mountains with a high point of 300 metres above sea level.  It is only a scant 2 miles from the False Bay coastline, the view of which can be seen from the stunning restaurant on the side of the winery.  
From the outset, it was decided that the half of the farm should be set aside to regenerate and preserve the rare and abundant natural vegetation, fauna and flora (fynbos) situated on the property and in May 2008, Waterkloof was awarded Champion Status by the World Wildlife Fund’s Biodiversity & Wine Initiative, for its enterprising endeavours in this regard (click here to find out more).
The vines have been farmed following organic and biodynamic principles since the outset and at one stage were certified until it became clear to the Waterkloof team that certification was actually hindering rather than helping their own desire for sustainability.  
Today the wines under the Circumstance and Circle of Life  labels are sold around the world mainly in top restaurants, and the independent retail sector.  They are consistently classic, elegant wines very much following the French philosophy of restraint and authenticity rather than extraction and power.  They are also always outstanding value for money.
