STAGE 9 – Aigle – Chatel Les Portes du Soleil, Switzerland - Dole La Liaudisaz Marie-Therese Chappaz 2019
Today the Stage starts and finishes in Switzerland and crosses some of the lower mountain passes which overlook the incredibly beautiful Lac Leman. They just by-pass the region that this wine comes from, called The Valais.
This is certified Biodynamic wine from Switzerland, made from Gamay and Pinot Noir. This is a classic Valais red wine, smooth, stylish and delicious. Dole is the traditional red for Sunday roast in the Canton du Valais. In the hands of Marie-Therese, it becomes a more serious wine with the capacity to age and a finesse and cool precision rarely achieved in the region. Aromas of Morello cherry, gooseberry, almonds and sweet spices characterise the nose and develop in the elegant palate which is both silky and firm. The finish is complex and leaves you thinking and wondering how the wine would develop after some bottle age. It would go well with any roast meat but is best with white meats and stews made with rabbit, chicken or veal. The reds from Chappaz age beautifully. The Dole is now entering its first phase of maturation, soft berry fruits, slightly animal aromas, lovely texture, drinking beautifully.
