Axel Pauly Purist Riesling is almost bone dry with just 0.8 grams residual sugar and you can almost taste the terroir of blue slate in the sinewy minerality of the wine. The wine is a Kabinett, meaning that it was harvested slightly later in the season, resulting in riper fruit and a fuller palate than the earlier-picked styles. It has richness as well as high acid freshness. A delightful Riesling, it will age very well and take on characteristic petroleum notes with time in bottle.

Axel took over the Pauly estate from his father working for wineries in California, New Zealand and other parts of Germany to hone his craft. Most of the seven hectares of vineyards are in the heart of the Mosel Valley in the village of Lieser, with the exception of a small parcel in the highly regarded, neighbouring village of Bernkastel. The majority of Axel’s wines are dry or off-dry in style and are closed with screw cap to preserve the purity and freshness from Riesling grown on the famous slate soils of the Mosel. Whilst conventionally produced, they express the incredible precision and purity of the wine's region better than most other examples from the region, with striking minerality.
