Peacock Ridge Cabernet Sauvignon is made with wild yeast from excellent vineyard sites in the Helderberg. Although not an organic wine as such, Waterkloof only source fruit from growers who operate sound ecological practise and then the wine is made as naturally as possible. It is full but fresh and not too tannic or heavy with cassis and berry aromas and some choco/vanilla notes from the oak. A lovely glass of Cabernet that won't break the bank.
The Waterkloof estate was founded in 2004, ending Paul Boutinot’s (of the epynomous importing business based in Gatley, Manchester!) persistent and uncompromising 10 year search for a vineyard site with the potential to produce truly fine wine with a defining sense of origin. Respect for nature, traditional wine making practices and minimal intervention are all key to their success. The wines of Peacock Ridge come from the finest sites of the W.O Stellenbosch appellation and are made using wild yeast ferment and sustainable viticulture.

Well I was surprised and not in a nice way. Thin and acidic and not at all the lovely fruity cab sav I'm used to. Can you have a bad bottle with a screw cap top?! Gets 2 stars because I can remember what it should be like!
Not sure on that one Rob, we will have to taste it and see, the wines are generally really good and full, perhaps, you just had a dodgy bottle. Rob
