The wild yeast Chenin Blanc from Peacock Ridge sometimes takes over 6 months to finish fermentation and over this time develops complex and intriguing aromas of garriguey herbs and local fynbos and a distinct note of oregano. On the palate you will find notes of wild honey and rich fruit. A full bodied white wine with partial fermentation in tanks and wood, ideal for creamy pasta dishes with mushrooms.
The Waterkloof estate was founded in 2004, ending Paul Boutinot’s (of the epynomous importing business based in Gatley, Manchester!) persistent and uncompromising 10 year search for a vineyard site with the potential to produce truly fine wine with a defining sense of origin. Respect for nature, traditional wine making practices and minimal intervention are all key to their success. The wines of Peacock Ridge come from the finest sites of the W.O Stellenbosch appellation and are made using wild yeast ferment and sustainable viticulture.
