Cyril Zangs

Based in Glos, Cyril Zangs is one of the greatest producers of cider of Normandy (in the same vein as the famous Eric Bordelet). Passionate and intriguing figure, Cyril started quite late (around 48 years old) to produce cider, aiming to produce top quality ciders that are as delicious on their own as with a meal. They grow sixty-nine varieties of apples, each possessing a particular characteristic (sweet, bittersweet, bitter, slightly acidic or sour), and are harvested from high-stem orchards which range from fifteen to sixty years old. All the apples are harvested by hand and undergo a long, 6 month fermentation process which takes place naturally. The unfiltered cider is bottled with no sulfites added.
