The word Tiersmen was used to describe the many escaped or released convicts from other states who had set up camp in the Hills and caused a bit of a ruckus by commonly making off with the livestock and crops of the free settlers. From the Ngeringa farm in Mt Barker we whole bunch ferment this wine for a short period before basket pressing into old French puncheons. Racked and bottled after six months to maintain freshness and liveliness.
