Gentle Folk

A bit of history…the Adelaide Hills were originally known as the Tiers.

The word Tiersmen was used to describe the many escaped or released convicts from other states who had set up camp in the Hills and caused a bit of a ruckus by commonly making off with the livestock and crops of the free settlers. This Syrah is a tribute to the time the hills were a bit wilder. From the Ngeringa farm in Mt Barker we whole bunch ferment this wine for a short period before basket pressing into old French puncheons. Racked and bottled after six months to maintain freshness and liveliness.
