The habitat is owned by the deer, squirrels and porcupines and Emilio sees himself as a guest, gratefully sharing in the bounty of this place. The soils are poor and sandy and the wine, made only with indigenous yeast is wild, rich and delicious. There is a real honesty in the wines here.
