Banyuls Ambre Domaine de Traginer 500ml, Biodynamic wine, ‘Vin Doux Naturel’, a wine oozing complexity, high acidity backed up by notes of raisin, prune and date. Ambre is the traditional wine from the Banyuls region, alongside the less likable sounding, ‘Rancio’. It is a white wine aged for a long time with oxidation, in the case of Traginer, this non vintage has an average age of 16 years. It has a deep gold colour and leads to incredible aromas of dried fruits, herbs, intense sweet spices, caramel and much more. The amazing thing about Banyuls is the acidity and even after 16 years, the freshness of the wine is incredible. A stunning match to all manner of strong blue cheeses but also anything with Christmas spices, nuts, honey etc, delicious.
