Circle of Life White Waterkloof biodynamic wine, Chenin blend, fresh fruits, creamy texture, layers of herbs and long finish, very good value. Citrus and lemon flavours, with slight peachy notes on the nose. A tight mineral core and creamy middle pallet allows for great complexity and a persistent finish. This is the personal project and passion of Paul Boutinot the eponymous wine importer. Listening to him talk about his vineyards and wines, it is hard not to be enthused and on tasting the wines, I was certainly very impressed. This is beautiful wine, made from a stunning wine project that is about to lose all the mechanisation in the vineyard to become totally natural. they are even going to use horses instead of tractors. It is totally bio-dynamic and they produce their own organic fertilisers. The winery is state of the art and the architecture of the building award winning. The restaurant is amongst the best in Stellenbosch and in general everything about this place is world class. Well the wines are excellent and the White in particular is a superb wine for white meat or firm fish dishes, leesy, characterful and fabulously elegant.
