Corbieres Racine Ollieux Romanis, organic wine, a classic southern blend of 30% Roussanne, 30% Marsanne,20% Grenache Blanc, 20% Macabeu (Viura).  These organic vines are between 10 and 35 years old and yield just 40 hectolitres per hectare, decent enough for the Languedoc but low enough to mean concentrated fruit and developed flavours in the wine.  The vines are trained in the traditional goblet form and thrive in the complex soils of red clay, sandstone, puddingstone (Galets) and limestone pebbles.  The fermentation takes place naturally and the wine is left to settle over the winter in tank on the fine lees before bottling in the Spring.  The wine is sensationally good for one of this price point.  It has freshness in abundance and exotic fruits and mineral notes of the front palate, but the finish is soft, warming, creamy and dreamy.  A superb wine for a whole array of foods from seafood, to Cheese to simple Pasta, creamy quiches and salads and poultry.

A family owned vineyard for several generations Château Les Ollieux Romanis is in Montseret (renowned for honey flavoured with thyme, rosemary and lavender), situated in the heart of the Boutenac region, an area dedicated to the culture of the vine since Roman times. The vines are located on a sheltered hillside facing south east. 

The original property didn't become a winery until the 18th century, and after the land had been split between two families and different businesses for over a century, it was reunited under current owners the Bories family in 2006.

The domaine is quite large but all farmed organically and with a fierce adherence to the traditions of the region.  Ollieux Romanis have acheived a fantastic balance between larger scale production and the protection of their local environment.  They make 70% of their wines using natural methods in the cellar and restore biodiversity to their land with rewilding and tree planting programmes.  

The results are fantastic wines with a sense of place and beautiful freshness as superb prices.
