Don Chisciotte Fiano Zampaglione, natural wine from the hills of Campania. An unusual yet delicious example of Fiano from a small farm 350 metres above sea level in the Campanian hills. The vines are famred following biodynamic principles. Fruit is hand harvested and undergoes a natural fermentation in steel with 10 days of skin maceration to produce a stylish, orangey hue. The nose is quite delicate for an orange wine with notes of peach and cut hay. The palate is slightly savoury with subtle citrus fruits, and a salty minerality. A great wine for seafood Risotto, Razor Clams, Simple Pasta with ‘Cozze’, (muscles) or just some really good anchovies in oil.
