EL TRESILLO AMONTILLADO FINO, Hidalgo. Deep brown, gold, salty like a Fino, also smoky dried grasses, stony minerality, flinty, nutty, noticeable fruitiness, bitter orange, sour apricot and smoky quince. Basically this outstandingly good sherry has it all going on. It is both unusual and delicious. It starts as a Fino matured for more than ten years under Flor. Then it spends more than five additional years ageing in contact with oxygen. This changes its characteristics from that of pure Fino to something unique – Amontillado Fino. Absolutely superb and you can drink with almost anything, even a steak according to Jancis Robinson!
