Emilia Bianco Frizzante Chi Mera Koi, natural frothy wine from Pignoletto and Montuni grapes, organic production, old vines from a mixed vineyard, tradition wine style from Emilia. For this unique expression of Emilia wine, the grapes are picked and the entire cluster is directly pressed. 5% of the must is collected and kept at a very low temperature. The 95% is fermented with indigenous yeast. There is no filtration, fining or sulphites added. In spring the 5% of unfermented must with natural sugars and yeast in it are added to the must. The second fermentation ensues in the bottle producing the light fizz. there is no disgorgement so it has a cloudy appearance and truly authentic aroma.
Che Mera is really Emilia’s version of col fondo Prosecco. It is dry, slightly bitter, very fresh and juicy with a light saline finish. For an Apero with salty snacks, it is fantastic. It would also work beautifully with some shellfish. Emilia’s long tradition of semi-spearkling wine goes beyond Lambrusco. The Frizzante white wines are also superb and very different from the standard fairly neautrl flavours of Porsecco or cheaper Cava. These are not Champagne alternatives but lovely frothy wines with their own identity, give them a try.
Please note, chill bottle well, open gently over sink, have a glass ready…natural yeast is lively! We wouldn’t want you to waste any.
