Fendant Coteaux de Plamont Marie Therese Chappaz 2019, Biodynamic wine, single vineyard, dry, medium bodied, elegant, long length, slight bitterness to the wine but with added depth and richness which lefts the wine and makes it very gastronomic. Located above the Claives parcel, the Plamont hillside is a much softer slope from whence the name “le Mont Plat” (flat mountain in English) is derived. Called the ‘red lands’ by winemakers in the past, the rich, loamy soil – which is red in colour – carried by the wind has accumulated here over the centuries since the last glacial era. A rich wine with beautiful minerality, the granite terroir brings a certain verticality and precision of acidity and tension. With citrus, citrus zest, peach and apricot notes, this wine takes time to fully express itself so will mature very well over the next 3-5 years. It is superb for richer fish, scallops, monkfish or smoked fish. In youth, open it and decant a few hours before serving.
