Furmint Harslevelu Peres Attila Homonna 2017, Natural Wine, classic Hungarian varieties, Furmint, Harslevelu, focused wine, taught and mineral, a slight bitterness on the finish. A wine of contrast, like many of the whites of Switzerland and the Savoie, these dry Tokaj wines display both acidity and backbone along with body and a bitterness on the finish. With age, the wine would intensify with the bitterness turning to nuttiness and the acidity softening to reveal the weight and body in the wine. These are great cheese wines and Charcuterie wines, but also hearty dishes with beans and smokey bacon would go well.
