Ghazii Sangiovese Frizzante Montesecondo, naturally Sparkling light red wine made from Sangiovese grapes. Sangiovese grapes are harvested early to ensure high acidity levels so picked slightly early. 90% of the grapes are pressed and fermentation takes place at a low temperature. the remaining 10% is set aside to make a ‘pied de cuve’, a type of natural yeast starter which is added later on in the bottle to create the second fermentation. The second fermentation starts in full when there are only 4 or 5 grams per litre of residual sugar left in the wine so the sparkling is subtle rather than very powerful. This method of making sparkling wine is similar to that used in traditional Lambrusco and Col Fondo Prosecco and is often called ‘Metodo Ancestrale’ (ancestral method), a grand-sounding but simple yet delicate vinification process which yields lovely fresh and easy to drink soft sparklers.
