Peacock Ridge Cabernet Sauvignon is made with wild yeast from excellent vineyard sites in the Helderberg. Although not an organic wine as such, Waterkloof only source fruit from growers who operate sound ecological practise and then the wine is made as naturally as possible. It is full but fresh and not too tannic or heavy with cassis and berry aromas and some choco/vanilla notes from the oak. A lovely glass of Cabernet that won’t break the bank.
