The wild yeast Chenin Blanc from Peacock Ridge Waterkloof, sometimes takes over 6 months to finish fermentation and over this time develops complex and intriguing aromas of garriguey herbs and local fynbos and a distinct note of oregano. On the palate you will find notes of wild honey and rich fruit. A full bodied white wine with partial fermentation in tanks and wood, ideal for creamy pasta dishes with mushrooms.
