Populis Sauvignon Blanc Living Wines Collective, organic Californian white wine, racy acidity, greenness and riper opulence along with an easy, natural drinkability. The grapes come from two sites. They farm both vineyards organically and the Sauvignon vines are 60 years old. The whole grape clusters are pressed directly with the juice settled and decanted off solids. A portion of the Upton Sauvignon is fermented on the skins to add texture. All native ferment with natural malolactic as a consequence and maturation in stainless on lees. They bottle the wine in Jan after the harvest without filtration or fining and with a minimum of sulphur. The mouthfeel is characterized by laser-like acidity. The aromas and flavours strike a balance between greenness and riper opulence. This results in a style that is uniquely Californian, yet with an old-world approach. The old-vines give Populis Sauvignon Blanc an additional dimension of depth and complexity.
