Savagnin de Voile Ganevat 2017, Iconic Biodynamic producer in the Jura, this signature wine is a rarity now, grab it while you can.  This Savagnin is aged under flor for 4 years in old oak barrels and undergoes slow oxidation during this time although not as much as for a Vin Jaune.   In the Jura, many of the wines go through a traditional, intentional oxidation; however Jean-François Ganevat aims to lend a greater lightness and elegance to wines of this style than is typical.  The result here is somewhat otherworldly, a wine of unusual depth and intensity, still with a racy acidity and freshness.  It is not for those unused to the oxidative style and we would highly recommend the right food when drinking, something classic from the region and likely involving cheese.  If you are a fan, then this rare fine wine will not disappoint.  We recommend serving not too chilled and decanting well and tackle the bottle between 4 people.

There are too many superlatives to describe the mythical wines of Jean Francois Ganevat. Since 1976 they have been focussing on wine production at their small farm in the heart of the Jura, where they work 13 hecatres of vines using biodynamic principles. They make tons of different wines and the tricky thing is getting hold of them. All are sensational, the whites rich and profound with amazing acidity, the reds, Burgundy Grand Cru level with an extra quixotic funkiness thrown in. We are starting with the Vin Jaune and will see what else we can lay our hands on, all very limited quantities so don't be putting 10 cases in the cart!
