This is a fantastically elegant sparkling wine made from Xarel-Lo and fermented in Amphorae and aged for a long time on the lees in bottle. The 2009 vintage is superb, complex and taught with lightly toasted aromas of biscuit and brioche. The palate is quite rich but has stunning freshness.
