Tillingham Flor Chardonnay , natural wine from Sussex, tiny production aged under flor yeast, subtle, textural wine with depth and complexity, sherry alternative. This wine is a blend of two components: a barrel of Chardonnay from 2019 and one from 2020. Both have been whole-bunch pressed and fermented and aged in old oak. During the ageing process, neither have been topped up and as a result have been ageing under flor. Chardonnay 2019 has 32 month under flor and Chardonnay 2020 has 18 months under flor. Like a light Manzanilla on the nose with notes of tangerine leads to a complex and textured palate, great aperitif.
