Piollot Rose de Maceration, Organic Champagne, wild yeast, long maceration on the Pinot Noir skins. This is a delicious expressive glass of artisan Champagne. Roland makes very interesting and deliciously authentic wines, none more so than his Rose de Maceration. These are wines which are made using an age old process unique to the southern part of the Champagne region, the Cote des Bars where Piollot are based. In the north, they make rose by adding some red wine to the white before the wine goes into bottle for the second fermentation. In the Cote des Bars where the grape of choice has always been Pinot Noir, they macerate the whole bunch for a couple of days, effectively starting to make red wine from the fruit before draining off the deep pink juice and then completing the second fermentation in bottle of this almost a red/pink wine. The Champagne produced is fascinating and complex with much of the red wine notes of a glass of good red burgundy, slightly gamey, with ripe strawberry and flowers. The fizz is delicate and the wine very fresh. It is delicious with barbecued fish or some little lamb cutlets or even a carpaccio of beef. Not quite the feminine pink stuff of the north of Champagne for toasts and parties, this is a much more genuine glass of artisan fizz!
