The grapes for the Badassiere Viognier come from selected vineyards around the Etang de Thau and Picpoul area of the Languedoc. The vines are planted on sandy, pliocene soils and are both machine and hand-harvested. The grapes are macerated on skins for a few hours, then pressed in a pneumatic press. The must is then fermented in stainless steel tanks at controlled temperatures between 17-19°C for approximately 16 days. No oak ageing or significant maturation ensues and the wine is released young to be drunk with 2 years of the harvest to maintain its freshness and youthful fruit character. The nose has subtle aromas of almond and honey which lead to a palate of guava and apricot flavours, balanced by refreshing acidity on the finish.
