Waterkloof Sauvignon Blanc, Biodynamic wine, 100% Sauvignon Blanc, like a Cru, single vineyard Sancerre, elegant, poised, rich yet very drinkable. This is the flagship wine of well renowned Mancunian Paul Boutinot from the eponymous Manchester based import business. The fruit for this retrained and elegant new world white is grown on the slopes of the Schaapenberg Mountain above false bay in the Helderberg region of the cape. The cool breezes, steep aspect and Biodynamic production make for a wine of great complexity, minerality and freshness. Paul's french roots are deep rooted and his wines have a definite Frenchness about them. The firm backbone of acidity and minerality of this Sauvignon mean it has great ageing potential, like a great Sancerre. You better buy up quick, production is very small and we haven't managed to get hold of much!

The Waterkloof estate was founded in 2004, ending Paul Boutinot’s (of the epynomous importing business based in Gatley, Manchester!) persistent and uncompromising 10 year search for a vineyard site with the potential to produce truly fine wine with a defining sense of origin. Located on the south-facing slopes of Schapenberg Hill near Somerset in the Stellenbosch district of the Western Cape’s Coastal Region, Waterkloof shares its magnificent Atlantic views with free-roaming peacocks and other natural fauna and flora attracted to this haven. Certified Biodynamic by Demeter in 2015, very quickly after deciding to pursue natural farming, their vineyards are of only a few in the Cape to boast official biodynamic approval and status. The estate has 56 hectares under vine and Tim Atkin’s Cape Classification currently ranks Waterkloof as 5th Growth level. With production around 165,000 bottles per year, Waterkloof make honest wines from their unique biodynamic coastal site. Respect for nature, traditional wine making practices and minimal intervention are all key to their success. The wines have a lovely approachable drinkability, showing that biodynamic doesn't mean weird and funky. The wines please most palates but retain their own uniqueness and style, a testament to Mr Boutinot's understanding of wine and wine drinkers.
